Southern Style Green Beans & Potatoes

🛒 Ingredients

  • 1½ lbs fresh green beans, trimmed
  • 1½ lbs baby red potatoes, halved
  • 5 slices bacon, chopped
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2½ cups chicken broth
  • 1 tbsp butter
  • 1 tbsp olive oil
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt, or to taste

  1. Cook the bacon: In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove some bacon for garnish if desired, leaving the drippings in the pot.
  2. Sauté the onion: Add the onion and cook for 3–4 minutes until softened. Add the garlic and cook for another 30 seconds.
  3. Add the vegetables: Stir in the green beans and potatoes. Add the butter, olive oil, smoked paprika, onion powder, black pepper, and salt.
  4. Add the broth: Pour in the chicken broth. Bring everything to a gentle boil.
  5. Simmer: Reduce the heat, cover, and simmer for 25–30 minutes, or until the potatoes are fork-tender and the green beans are cooked to your liking.
  6. Finish: Stir everything together and taste for seasoning. Sprinkle the reserved crispy bacon over the top.
  7. Serve: Serve hot as a side dish with fried chicken, roast beef, pork chops, or cornbread. 😋
