Aunt Betty guarded this 4 ingredient recipe for years; I found it scribbled in the back of her notebook and now my kids fight over the corner piece.

This 4-ingredient lemon cookie icebox cake is the kind of no-bake dessert that feels like a little family treasure: simple, nostalgic, and almost too easy for how delicious it turns out. The creamy lemon filling softens the shortbread cookies into tender cake-like layers as it chills, giving you a bright, old-fashioned dessert that is perfect for spring gatherings, potlucks, or those busy weeknights when you still want something special waiting in the fridge.

Serve this chilled in small squares with fresh berries, a dollop of whipped cream, or a hot cup of coffee after dinner. It also fits right in on a brunch table with fruit salad, iced tea, or lemonade, and because it is rich and tangy, it pairs especially well with lighter fresh sides and simple summer meals.

Ingredients

2 sleeves shortbread cookies

8 ounces cream cheese, softened

1 can (14 ounces) sweetened condensed milk

1/2 cup frozen lemon concentrate, thawed

Directions

1. In a medium mixing bowl, beat the softened cream cheese until smooth. Add the sweetened condensed milk and lemon concentrate, then mix until the filling is creamy and fully combined.

2. Spread a thin layer of the lemon filling in the bottom of an 8×8-inch clear glass baking dish.

3. Arrange a single layer of shortbread cookies over the filling, breaking a few cookies as needed to fit. Spread more filling over the cookies. Repeat the layers until all the cookies and filling are used, finishing with a smooth layer of lemon filling on top.

4. Cover the dish and refrigerate for at least 6 hours, or overnight, until the cookies have softened and the dessert is fully set.

5. Slice into squares and serve cold.

Variations & Tips

Make-ahead tip: This dessert is even better after an overnight chill, so it is a great one to make the day before a party or holiday meal when you need one less thing on your counter the next day.

Extra lemon flavor: If your family loves a sharper citrus flavor, add a little fresh lemon zest to the filling. It keeps the ingredient list simple but gives the whole dessert a brighter homemade taste.

Cookie swap: If you cannot find shortbread cookies, vanilla wafers or graham crackers can work, but shortbread gives the richest flavor and that classic buttery texture Aunt Betty probably intended.

Clean slices: For neater squares, chill the dessert thoroughly and wipe your knife clean between cuts. The corner pieces are usually the easiest to lift out neatly, which is probably why everybody reaches for them first.
