My sister makes this every August and it disappears in seconds. Only 3 ingredients to make the perfect refreshing summer dessert.

Slow cooker 3-ingredient whipped lemonade cobbler is the kind of easy summer dessert that feels almost too simple to work, and then somehow turns into the first thing everyone goes back for. It has that sweet-tart lemonade flavor that tastes especially perfect in late summer, with a soft golden topping and bright lemony filling underneath. This is exactly the sort of recipe I love keeping in my back pocket during busy weeks because it uses just a few pantry-friendly ingredients and lets the slow cooker do all the work.

This cobbler is especially good served warm with a scoop of vanilla ice cream or a spoonful of whipped topping if you want to lean into the creamy, citrusy flavor. For a summer get-together, I like pairing it with grilled burgers, barbecue chicken, or simple sandwiches since the bright lemon dessert balances richer main dishes really well. Fresh berries on the side also make it feel a little extra without adding much effort.

4. Slowly pour the lemon-lime soda over the top, covering as much of the cake mix as possible. Do not stir; the layers need to stay separate so the cobbler texture forms as it cooks.

5. Cover and cook on high for 2 to 2 1/2 hours, or until the top looks set around the edges with a soft golden crust and the lemon filling is bubbling underneath.

6. Turn off the slow cooker and let the cobbler rest for 10 to 15 minutes before serving so the filling can thicken slightly. Spoon into bowls and top with whipped cream or vanilla ice cream if desired.

Variations & Tips

Berry boost: Add 1 cup of fresh blueberries or raspberries over the lemon pie filling before sprinkling on the cake mix. The fruit adds color and a little extra tartness that works really well with the lemonade flavor.

Make it extra creamy: If you want more of that whipped lemonade feel, serve each portion with a generous swirl of whipped topping right before serving. The cool creaminess against the warm cobbler is what really makes this dessert disappear fast.

Watch your cook time: Slow cookers can run a little differently, so start checking around the 2-hour mark. You want a set top and bubbling edges, but not an overcooked dry center.

Easy cleanup tip: A slow cooker liner makes this especially convenient for potlucks or summer parties. It also helps if you are making dessert after a long workday and do not want one more dish waiting in the sink.

Serve it warm, not piping hot: Letting the cobbler rest briefly before scooping helps the lemon filling thicken and makes the texture much better. It is still cozy and soft, but easier to serve neatly.
