1 teaspoon dried thyme (optional)

1 tablespoon balsamic vinegar (optional, for extra flavor)

INSTRUCTIONS:

Preheat the oven: Set your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the potatoes: Peel the potatoes and cut them into cubes. Place them in a bowl and toss with 2 tablespoons of olive oil, garlic powder, paprika, salt, and pepper. Spread the potatoes evenly on the prepared baking sheet.

Caramelize the onions: Heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for about 10-12 minutes, until the onions soften and turn golden brown.
