Ingredients
3 cups cooked, shredded chicken
2 cups corn (fresh, frozen, or canned & drained)
1 cup sour cream
½ cup mayonnaise
1½ cups shredded cheese (Mexican blend or Monterey Jack)
½ cup crumbled cotija cheese (or feta)
1 teaspoon chili powder
½ teaspoon smoked paprika
½ teaspoon garlic powder
¼ teaspoon cumin (optional)
Juice of 1 lime
Salt & pepper, to taste
½ cup chopped green onions or cilantro
Optional topping: crushed tortilla chips or extra cheese
Instructions
Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
In a large bowl, mix sour cream, mayonnaise, lime juice, and spices until smooth.
Stir in chicken, corn, shredded cheese, cotija, and green onions/cilantro.
Spread mixture evenly into the prepared baking dish.
Top with extra cheese or crushed tortilla chips, if using.
Bake uncovered for 25–30 minutes, until bubbly and lightly golden.
Let rest 5 minutes before serving.
