Golden Lemon Anti-Inflammatory Soup

Ingredients
- 1 cup red lentils, rinsed
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 3 carrots, sliced
- 2 stalks celery, sliced
- 3 cloves garlic, minced
- 1 tsp ground turmeric
- 1 tsp ground cumin
- ½ tsp black pepper
- 1 bay leaf
- 4–5 cups vegetable broth
- Juice of 1 large lemon (plus slices for serving)
- 2 tbsp fresh parsley or cilantro, chopped
- Salt, to taste
- Optional: chili flakes or grated ginger
Instructions
- Sauté the base
Heat olive oil in a pot over medium heat. Add onion, carrots, and celery. Cook for 5–6 minutes until softened. - Add aromatics & spices
Stir in garlic, turmeric, cumin, black pepper, and bay leaf. Cook for 30 seconds until fragrant. - Simmer
Add red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20–25 minutes, until lentils are tender. - Finish with lemon
Remove bay leaf. Stir in fresh lemon juice and adjust salt to taste. - Serve
Ladle into bowls, garnish with herbs and lemon slices. Add chili flakes if desired.
