Fish Camp Style Fried Catfish
Soak catfish fillets in buttermilk for at least 30 minutes to cut any strong flavor.
In a shallow dish, mix cornmeal, flour, paprika, garlic powder, cayenne, salt, and black pepper.
Dredge each fillet in the seasoned coating, shaking off excess. Heat oil in a deep skillet until shimmering hot.
Fry the catfish in batches until golden brown and crispy on both sides.
Drain on paper towels and serve hot with hush puppies, coleslaw, French fries, and tartar sauce for a true fish camp feast.
